I have just finished a Brute de Forge Gyuto Chef Knife. This Chef Knife is made from 1095 high carbon steel. This style knife is great for all kitchen duties, but with a longer cutting edge, long slicing tasks are easily accomplished. It is a very reliable general purpose chef knife. It can process meat,  fish, vegetables etc. This knife has a cutting edge of 9 1/2 inches and a blade height of 2 1/4 inches at the heel which gives medium to larger hands ample clearance from the cutting board. The knife has been heat treated and tempered to approx. 63 on the Rockwell hardness scale. The handle is made of stabilized and dyed Maple Burl with Ebony at the bolster. This is a segmented handle with White and Black G10 Spacer, Copper accent spacers and a Blue / Green acrylic centre section and White G10 liners. And to finish off the handle, Black micarta pins complete the build. This blade also comes with a hand made leather Saya (sheath). 

With all high carbon steels they will patina over time which will actually protect the blade from rust, but, wiping off the blade with a dry cloth or towel while using it will prevent the bad oxides from forming.

Never put high carbon steel knives in the dishwasher! Always wash by hand and dry. The handle is made from natural wood so keeping it dry is a good practice.
