This Chef Knife is made from 80CRV2 high carbon steel. This style knife is great for all kitchen duties, but with a longer cutting edge, long slicing tasks are easily accomplished. It can easily process meat,  fish, vegetables etc. This knife has a cutting edge of 9 3\/4 inches and a blade height of 2 1\/2 inches at the heel which gives medium to larger hands ample clearance from the cutting board. The spine and the choil have been rounded over and polished for the utmost in comfort. The knife has been heat treated and tempered to approx. 63 on the Rockwell hardness scale. The handle which is a traditional Japanese style Wa handle (hidden tang) is made of stabilized Birds Eye Maple with Padauk at the bolster and are separated with a lime green spacer. This Chef Knife also comes with a hand made leather Saya (sheath). \u003c\/p\u003e\n\u003cp\u003eWith all high carbon steels they will patina over time which will actually protect the blade from rust, but, wiping off the blade with a dry cloth or towel while using it will prevent the bad oxides from forming.\u003c\/p\u003e\n\u003cp\u003eNever put high carbon steel knives in the dishwasher! Always wash by hand and dry.
