Hand made hand forged Santoku Chef Knife. The Santoku is a Japanese Chef Knife with western influences. This style knife is more of a all around chef knife. It can process protein, vegetables, can be used for chopping and many other kitchen duties. This knife has a cutting edge of 6 1/2 inches and a blade height of 2 inches across the length of the blade. The steel used is 1095 high carbon, it has been heat treated and tempered to approx. 61 on the Rockwell hardness scale. The handle on the knife is made up of Ebony and paired with stabilized and dyed Sycamore. Blue and White G10 spacers, White liners and Brass pins complete the build. This blade also comes with a hand made leather Saya (sheath).
